From the organic greens below I made this protein rich, curry-ish, warm salad:
- Lettuce and fresh herbs, all kinds
- Carrot leaves
- Spring onion, include green part
- Green and red pepper
- Chilli (if you like it spicy hot)
- Pre-cooked rice and quinoa
- Toasted peanuts and a few raisins
Lightly heat olive oil with some spices like garam masala, curry or just garlic turmeric and black pepper.
Stir fry the veggies you like, but not the leaves. Add the precooked rice and the quinoa. Add salt and pepper if you wish.
Put the green leaves and the carrot leaves on a plate. Add the stir fried mix and sprinkle the peanuts, raisins and herbs above.
Remember that all the green leaves like the carrot leaves are much more nutrient packed then the root. Use them! We are probably supposed to eat what is above the ground, and it is logical and kind of nicer as you don't need to kill the plant by pulling up the root.
